Taste: Full of Crepe


If you haven’t yet tried Full of Crepe, you will definitely want to make it your next stop.  Tucked away on Bethlehem’s Southside, this gem of an eatery serves crepes like no other.  Owned and operated by Lehigh Valley native K. Ashley Caldwell, Full of Crepe serves homemade crepes with creativity and a love for the community. Caldwell uses fresh and local ingredients – Pennsylvania flour, dairy, butter and other small, local vendors for fruits and vegetables. The crepes are light and flavorful filled with a variety of ingredients and delicious infusions.
Caldwell first opened her tiny establishment in October 2012.

An avid skier, she first discovered her love of crepes during frequent trips to Breckenridge, Colo. and specifically visiting a particular crepe stand with each trip. After turning 40 and looking for a change, Caldwell rediscovered her love of food and with  15 years experience in the food industry, she took a chance and opened her own shop. A short time later, she was able to acquire the space next door, allowing for seating with three tables and a counter. Caldwell says her vision was to serve high-quality food at an affordable price that would allow customers to walk and eat or sit nearby on a bench while enjoying the outdoors.She comments, “I wanted to serve folks a simple meal in a casual environment.”

Customers quickly became regulars and newcomers arrive all the time. Even a favorite condiment that is served with some of the crepes has a story. Hank Sauce, which originated from Sea Isle City, N.J. was introduced to her on the same day she quit her job.  She was given one bottle, which sat on her shelf for a full two months before a customer asked if she had any hot sauce.  The following day, a large group of students (friends of that customer) arrived to order crepes with the hot sauce they had heard about and the rest was history.

In 2014, Caldwell opened a food truck and in 2016, two additional locations were added – a second in the Easton Public Market and a third in Del Ray, Fla.  Even a few of Caldwell’s regulars with Florida ties were instrumental in helping her open the third location. “It’s been an incredibly rewarding experience. I’ve not only learned so much about the food industry but also about the community, good will, caring and love,” she says.

Blue Plate – Egg, cheese (cheddar, mozzarella, swiss or cooper extra-sharp American), Boar’s Head ham or bacon.
Turkey Lurkee – (pictured) Boar’s Head Oven Gold turkey, mozzarella, spinach, tomato and pesto mayo drizzled with a Balsamic reduction.
The Kid – Spinach, tomato, caramelized onion and goat cheese with a Balsamic reduction.
